Microgreens and Mango Salad

Ingredients:

  • 2 C mixed microgreens (such as arugula, radish, and broccoli)

  • 2 ripe mangoes, peeled, pitted, and diced

  • 1/4 red onion, thinly sliced

  • 1/4 cup chopped fresh cilantro

  • 2 TBSP chopped roasted almonds

  • 1 lemon, juiced

  • 2 TBSP extra-virgin olive oil

  • 1 TSP honey or maple syrup (optional)

  • Salt and black pepper to taste

 

Directions:

Prepare the Salad:

In a large salad bowl, combine the mixed microgreens, diced ripe mangoes, thinly sliced red onion, chopped fresh cilantro, and roasted almonds.

Make the Lemon Vinaigrette:

In a separate small bowl, whisk together the freshly squeezed lemon juice, extra-virgin olive oil, and honey or maple syrup (if using) until well combined. Season the vinaigrette with salt and black pepper to taste.

Toss and Dress:

  • Drizzle the lemon vinaigrette over the salad ingredients in the large bowl.

  • Gently toss the salad to evenly coat the microgreens, mangoes, and other ingredients with the flavorful vinaigrette.

Serve:

  • Plate your Microgreen and Mango Salad and serve it immediately as a refreshing and vibrant side dish or light meal.
