Microgreens and Mango Salad
Ingredients:
2 C mixed microgreens (such as arugula, radish, and broccoli)
2 ripe mangoes, peeled, pitted, and diced
1/4 red onion, thinly sliced
1/4 cup chopped fresh cilantro
2 TBSP chopped roasted almonds
1 lemon, juiced
2 TBSP extra-virgin olive oil
1 TSP honey or maple syrup (optional)
Salt and black pepper to taste
Directions:
Prepare the Salad:
In a large salad bowl, combine the mixed microgreens, diced ripe mangoes, thinly sliced red onion, chopped fresh cilantro, and roasted almonds.
Make the Lemon Vinaigrette:
In a separate small bowl, whisk together the freshly squeezed lemon juice, extra-virgin olive oil, and honey or maple syrup (if using) until well combined. Season the vinaigrette with salt and black pepper to taste.
Toss and Dress:
